2018 Cabernet Sauvignon
Tasting Notes
"This wine has classic Cabernet characteristics of cassis, cherries and hints of leather and cocoa powder. French and American oak combine vanilla and spice, creating a foil for the blackberry and plum fruit flavors and a round, flavorful finish. Pair with grilled grass-fed beef or bison or try with aged and semi-hard cheeses, pistachios and walnuts."

Vineyards
The Alexander Valley AVA sits inland from the Russian River yet is still influenced by the banks of this waterway. Alluvial soil and river rocks run throughout our Alexander Valley vineyards, which sit on the ancient sides of the Russian River as it runs north to south through the AVA. The soil is well drained and the rocks help retain enough heat during the night which helps ripen the grapes.
Fermentation & Aging
We picked individual vineyard blocks from our Alexander Valley vineyards when they had the perfect balance between ripeness, acidity, and flavor. Fermented separately in stainless steel tanks, the lots were then oak aged with a mix of French, American and medium and medium + toast levels. A little touch of American oak adds vanilla and spice flavors which marry well with the structure in the French oak.
